Ethnic Goan cuisine has a rich history and has been influenced by the Moguls, Portuguese, and ethnic South Indian cuisine.Most of the names of Goan dishes are blended from Konkani (local language of Goa) and Portuguese. Sorpotel, Vindaloo, Xacuti (shacuti) is a fusion of Portuguese and ethnic Goan cuisine. Coconut is used extensively in the preparation of Goan fish and shrimp curry.
